Elvio Cogno are on the Bricco Ravera, a hill near Novello, with 11 hectares of vineyard around the winery. The Cogno family have been producing their own wine since 1990, having previously sold all their grapes to a large merchant

Nebbiolo is high in both tannin and acidity – it needs (and matches brilliantly) rich meat dishes. Venison would be perfect
