Ugni Blanc grapes fermented into wine, then distilled to spirit in a copper still, followed by ageing in 350 litre Limousin oak barrel


Six generations of the Vallet family have produced cognac at Chateau de Montifaud since 1837 (one even died from a fall from the top of a blending vat). Now Michael and Laurent Vallet, father and son, work together to produce a range of cognacs drawing from family properties in both Petite Champagne and Grand Champagne


Most Cognacs are blends of vintages; this is a relatively rare example of a single year. Long ageing in barrel gives a mellow, gently rounded style
