Cremisan is the creation of a Christian convent, supporting the local Palestinian villages near Bethlehem (which is in the ‘West Bank’ area, south of Jerusalem). They use the renowned Italian winemaker-consultant Riccardo Cotarella.
That is unusual enough in itself, but the wine is also one of the first attempts to revive indigenous grape varieties from the region. Most varieties used in Roman (and pre-Roman) times have been lost. But this is one of a few varieties that have been discovered, cultivated and now grown for wine production.
The Dabouki vines are grown at an altitude of 800 metres – cool nights help retain freshness in this warm climate.

Grape variety:

Fermented in steel tanks at cool temperatures to preserve the natural delicacy and freshness of the grapes.

Old Bridge rating:

Dry but delicate, remarkably so, given the warm climate.
