Pessac is the smart part of what has been called ‘Graves’ for centuries. It’s know as one of the best red wine areas in Bordeaux, but amongst real wine buffs it is really known as THE white wine area in Bordeaux. Some of the world’s most sought-after and expensive whites come from this small, rather suburban region

80% Sauvignon, 20% Semillon, fermented and matured in 100% new oak

Producer:

Domaine de Chevalier make consistently excellent reds but their crown jewel is this white. Unusually for serious white Graves, it is Sauvignon not Semillon that is predominant

Old Bridge rating:

This is not an “easy” Sauvignon Blanc but it is an outstanding bottle of wine. The sheer concentration of fruit soaks up the heavy oak influence. It is certainly very rich – and consequently much better with food. It is also sill young, although 2009 is a very ‘forward’ vintage and it is already enjoyable.

Treat as a white Burgundy. Brilliant with serious white fish or chicken dishes, particularly if with rather old-fashioned creamy sauces
