Sherry comes from Jerez in south west Spain and Valdespino own 750 hectares of vineyard in the designated area. As for most PX’s the grapes actually come from the Montilla region further inland in Andalucia, around Cordoba. The hotter, drier climate there is ideal for producing the raisiny, intense sweetness, which is magnified but he drying processs.
100% Pedro Ximenez, picked ripe and then dried on ‘esparto’ grass mats in the sun, before being fermented to about 4-6% and then fortified to the final 17%. It is then aged for an average of 10 years (through the ‘solera’ system of fractional blending).
Valdespino has been a famous name in Jerez for centuries, and has been owned by the Estevez family since 1999. They are one of the few sherry houses to own almost all their own vineyards. This obviously gives them full quality control from start to finish of the product.
Intense, ultra-sticky, lusciously rich. At 400g of sugar per litre, it’s twice as sweet as most Sauternes. As is now well know, it’s perfect poured over vanilla ice cream.
