Sherry comes from the area around Jerez in south west Spain

Grape variety:

Pedro Ximenez grapes, picked ripe then laid out in the sun to dry. Fermentation starts slowly then is stopped by fortification (the addition of alcohol)

Producer:

Lustau is a great Sherry house, founded in 1896 and still family owned. Renowned for their ‘almacenista’ – wines from a very small batch, matured in a private house, named after the appropriate individual famil

Old Bridge rating:

PX is the grape normally used to blend with other wines to make the sweet styles. Some houses bottle some ‘pure’ PX – it is the richest, stickiest, most intense style of sweet wine in the world. Sip on its own or pour it (neat) over vanilla ice cream for a brilliant no-effort pudding

Food match:

As stated above this is liquid ‘sauce’. For the sweet-toothed it’s a foil for Christmas pud. For many of us it’s a gentle digestif with a strong coffee after dinner
