Sauvignon Blanc matured for 9 months in (a single) old, 400 litre oak barrels, with regular lees stirring.
Miles Mossop is the charismatic winemaker for the stunning Tokara winey. He also makes a small range of wines under his own label. From his website, he tells us that the Chaper Four is 100% Sauvignon Blanc ‘from a single 34-year-old bush vine vineyard in the Stellenbosch growing on decomposed shale soils.’
Just one barrel produced – a very special, and rarely complex, example of Sauvignon Blanc. It’s evolving each year and may well not be at its very best until 2025.
