A single vineyard with a south westerly slope just 3.5 km from False Bay (east of Cape Town) with cool maritime onshore breezes from the Atlantic. Soils are granite-clay loams which restrict yield and allow for retention of acidity and varietal aroma

Viognier, aged in used oak barrels for six months

Producer:

Chris Williams is winemaker at the famous Meerlust winery. As a part-time business he runs his own boutique label ‘The Foundry’, leasing vineyards of Grenache Blanc, Viognier and Syrah. He is a thoughtful and experimental winemaker – half of the wine had ‘wild yeast’ fermentation; and half went through malolactic fermentation. Technical stuff, but the key point is that he thinks out every decision carefully
