Xinomavro; cold-macerated for 2 weeks and then fermented very slowly (up to 2 months), before 6 months’ maturation in old oak barrels.

Old Bridge rating:

Xinomavro is a fascinating grape variety. Nebbiolo-like in its perfume and tannic structure, but a little lighter and less intense. This is the essence of what we mean by “savoury” in a red wine.
